Smoked Chicken, Corn and Potato Bisque

  • 2 cups Smoked Chicken - Cubed (see recipe on Website)
  • 2 cups Frozen Corn
  • 1 large Baking Potato - cubed
  • 1 tbsp Olive Oil
  • 1 tbsp Scott's Cajun Seasoning
  • 1 tsp Salt
  • 1 clove Garlic
  • 1 Medium Onion - chopped
  • Hot Sauce(optional)
  • 3 cups Chicken Broth
  • 1 cup Heavy whipping cream

This can be done in an Instant Pot or on stove.

Stove directions

In a 5 qt pot, add olive oil and onions on medium heat and cook until translucent. Add all of chicken, broth, 1 cup of corn, 1/2 cubed potato, garlic, Scott's Cajun Seasoning and salt to onions. Bring to a boil, reduce heat to low and cover for 20-30 minutes stirring occasionally. Using a standard blender or immersion blender, puree until smooth. Add remaining potatoes. corn and chicken and simmer until potatoes are tender. Add cream. Stir thoroughly. For extra heat, add hot sauce. Serve with hot French bread and enjoy!

Instant Pot

Set Instant pot on sauté and add olive oil and onions. Cook until translucent. Add 2/3 cup of chicken, broth, 1 cup of corn, 1/2 cubed potato, garlic, Scott's Cajun Seasoning and salt to Instant Pot. Close lid, set on high for 5 minutes. Once 5 minutes is complete, carefully release pressure immediately. Using a standard blender or immersion blender, puree until smooth. Add remaining potatoes. corn and chicken. Cover and set for 2 minutes. Once complete, carefully release. Add cream. Stir thoroughly. For extra heat, add hot sauce. Serve with hot French bread and enjoy!
