Seared Salmon with Shrimp Chipotle Cream Sauce
- 2 Pounds Salmon Filet (Skin removed)
- 1/2 Pound Shrimp (peeled and deveined)
- Scott's Cajun Seasoning
- Olive Oil
- 2 tbsp Butter
- 1 Medium Onion (diced)
- 1 clove Garlic (finely chopped)
- 2/3 cup White Wine
- 1/2 cup Broth (Seafood, Chicken, or Vegetable)
- I tbsp Adobo Sauce from Can of Chipotle Peppers in Adobo Sauce (add more depending on desired spice level)
- 1/3 cup Half and Half Cream
Add butter and onions to a hot skillet on medium heat. Once onions are clear add garlic and shrimp. Let cook until shrimp has turned pink. Add wine and increase heat to high until it comes to a boil and reduce to medium. Add broth and allow to simmer and reduce. While simmering add adobo sauce and 1 tsp Scott's Cajun Seasoning. Stir well and set aside on simmer.
Heat up a separate skillet on medium high. Add 2 tbsp olive oil. Generously coat both sides of salmon with Scott's Cajun Seasoning. Add seasoned salmon to hot skillet and allow to cook for 3-4 minutes depending on thickness. Flip salmon and allow to cook for 2-3 minutes or until cooked to preferred temperature. Remove from heat and plate salmon topped with sauce and your favorite side.
