Pastalaya

Pastalaya - This recipe was originally from Cajun Ninja, but I made a few changes to make it in my opinion better.

  • ! pound Smoked Sausage - sliced
  • 1 pound Boneless Skinless Chicken Thighs - cut in cubes
  • I pound of Pork - cut in cubes
  • 1 medium Onion
  • ! small Bell Pepper
  • 2 cloves Garlic - crushed
  • 1 Tbsp Olive Oil
  • 32 oz Broth - I used beef ,but use what you have
  • 8 oz Milk - I used half and half, but again use what you have
  • 1 tsp Salt
  • ! tbsp Scott's Cajun Seasoning
  • 16 oz Pasta - I used Rotini, Cajun Ninja recommends bow tie, but use what you have.
  • Green Onions - optional
  • Parsley - optional

Preheat Oven to 300 degrees.

Place oil in a heated 5 qt pot, brown pork, chicken and sausage on medium/medium high heat. Once thoroughly browned, remove meat from pot. Add onions and bell peppers to the pot and cook until onions turn clear, should be about 5 minutes. Add garlic to the onions and bell peppers. Cook another minute. Add broth, milk, Scott's Cajun Seasoning and salt to the pot. Scrape the bottom of the pot while liquid is heating up to ensure the liquid mixes well with the drippings. Add meat and pasta and bring to a boil. Stirring to combine all ingredients together. Once it begins to boil, cover the pot and place in the oven at 300 degrees for 1 hour. Once the hour is complete, remove and let sit for 5 minutes without removing the lid. After 5 minutes serve and garnish with parsley and/or green onions. Enjoy!
