Instant Pot Red Beans
1 medium onion (diced)
1 medium bell pepper (diced)
1 pound of dry red beans (rinsed)
32 oz of beef broth
12 oz of water or your favorite beer
2 tbsp of Scott's Cajun Seasoning
1 tsp of salt
1 tbsp of Worcestershire Sauce
1 pound Smoked Sausage
1 tbsp of vegetable oil
1 clove of garlic (crushed)
Set Instapot to saute, add oil and sausage. Cook until sausage is browned. Add remaining ingredients into the Instapot, stir to mix together. Put on lid and set Instapot to pressure cook for 45 minutes. Once completed carefully remove lid. Add Scott's seasoning as required. If there is too much liquid, set on saute stirring often until desired consistency. Serve over rice.
